Hello and welcome to Organic Edible Garden. Today we’re going to look at growing and using microgreens. Microgreens are fantastic to grow all year round but particularly during the summer heat when salad greens are more difficult to grow in the garden. And also we’re going to talk about the wonders of wheatgrass. Lettuces ideally grow in the cooler months of autumn and spring. But if you want to grow them during summer, it’s best to put them in the shade. In summer, lettuces planted in the full sun can dry out. They can then harden and go slightly bitter. Whereas when you’re growing microgreens, they’re ready in less than a week, they’re always tender and fresh, and are full of nutrients. You can grow your microgreens in any container as long as they’ve got holes down the bottom for good drainage. We’re then going to add some good potting mix which we’ve laced with some fertiliser of seaweed and rock dust. Unlike sprouts which are grown in water, microgreens are grown in the soil and they take up all the nutrients that are important for our health. Any simple potting mix is fine to grow your microgreens, but I prefer to add something to it, just to give them that boost of minerals and vitamins. Next thing we’re going to do is we’re going to plant seeds on top of the soil. Again it’s really important that you keep your seeds in the fridge because it aids with the germination. Today we’re going to plant some coriander, some cress and some rocket. The cress and rocket take 5 days to grow from seed to this stage, whereas the coriander may take at least a week or ten days. When buying seeds for microgreens, it’s best not to buy them by the packet. You can buy microgreen seeds in bulk from seed companies like Kings Seeds which makes it a lot more economical. When planting microgreens, you have to plant them fairly thick. Here we’re planting some cress… … some rocket… … and some coriander. Microgreens are not just a trendy garnish. They’re packed full of enzymes, nutrients and vitamins which are so good for us. The next thing we do is we push them into the soil. You can cover these over with a substrate like vermiculite, but I don’t recommend putting soil over your microgreens. Here we’re just going leave them open and we’re going to give them a light water, or cover them with a cloth or a tea towel and put them in a shady area to germinate. You can also get another container and just put it upside down until germination occurs. We’re then going to cover them with a wet tea towel and check them every day until they’ve germinated. Hopefully at this time of the year with this warmth, within 5 days the cress and the rocket will look like this. This is what the rocket and cress look like after 2 days. Growing wheatgrass, like microgreens, is really easy to do at home. All you need again is a container with some good soil in… … and some wheat which you can buy in the bulk bin of any organic store. The difference between this and the microgreens is we’ve got to put it on quick thick. We put it on so none of the soil shows. We then give it a good water, put it in a shady place and maybe cover it with a tea towel until it germinates. This will probably take about a week, then within another week it will get to the full height and it’s ready to be used. When using microgreens in a salad, they’re at their most nutritionally dense before they get their first true leaf. The best way to cut your microgreens in the kitchen is with a pair of scissors. So first of all we’re putting in rocket… … we’ve added some mixed microgreens… … some lettuce… … some red and green radish for texture and colour… … and finally pea shoots. You can add any other vegetables and any type of dressing you like, but personally I like it just as it is. When juicing wheatgrass it’s important to have the right juicer. You want something that masticates the food rather than the centrifugal. It puts too much oxygen in and destroys the enzymes. Here we’ve got an Oscar, but you can get one of the hand-held juicers, or you can put it straight into your Magic Bullet or your green smoothie. Wheatgrass is one of nature’s wonder foods. It’s a natural healer and is full of chlorophyll. It is full of oxygen which is then absorbed into the mucus membrane and put straight into our blood system. It is a great detoxer and will take all of the heavy metals and the toxins in your body and wash them out. Wheatgrass has the ability to absorb 92 of the 115 minerals known to man. So when planted in a good soil it’s going to absorb all those things like iodine and boron and selenium which our body needs when we juice it. As it’s one of the best alkalanising food known to man. If you’ve never had wheatgrass before, it’s often best just to start small, and maybe once or twice a week. It’s going to detox you and you might feel a bit nauseous or have a headache. But as the toxins come out of your system, every time you have a wheatgrass, it’s a real boost. You can mix it with another type of fruit juice if you find it too strong, but I find it’s best just as is.
